What are food intolerances?
Unlike allergies, intolerances are not an IgE-mediated immune response. They appear because the body does not properly metabolize a specific compound: an enzyme is missing (e.g., lactase for lactose, DAO for histamine), or the microbiota ferments poorly absorbed carbohydrates (FODMAP), or there is cross-reactivity with the intestinal immune system (non-celiac gluten).
Intolerances are NOT always permanent
Many intolerances are secondary to dysbiosis or intestinal permeability. By restoring these conditions, tolerance returns. Others (lactase deficiency, genetically low DAO) are more structural but can be managed well with strategy. The mistake is to assume “I am intolerant to X for life” without having addressed the cause.
How we approach it
Identify the exact pattern. Acute phase plan (targeted elimination + repair). Progressive reintroduction with real tolerance monitoring. Building a sustainable diet that isn’t a cage of restrictions forever.
